Ingredients
- 1 cup fresh strawberries, sliced or quartered
- ½ cup double cream plain yogurt
- 1–2 tbsp fresh cream
- 2 small scoops keto vanilla ice cream
- ¼ tsp vanilla essence
- ½ tsp unsweetened cocoa powder, for sifting
- a few fresh mint leaves

To serve: This parfait is best served soon after assembling while the ice cream is still soft and the berries fresh. Clear glasses show off the layers beautifully — and that hint of cocoa creates a lovely contrast against the yogurt and fruit.
Variations:
- Use whipped cream instead of yogurt for a richer, dessert-style parfait.
- Add a sprinkle of finely chopped nuts, toasted coconut, or dark chocolate curls for texture.
- Swap some of the strawberries for raspberries or blackberries for a more tart profile.
- I like to add some finely chopped mint leaves to every layer.
Storage: Best enjoyed fresh, but you can prepare the yogurt mixture and sliced berries up to 4 hours ahead and assemble just before serving.
