It’s cool, light, and naturally sweet, with the cocoa adding a hint of depth and the mint a bright lift. The sweetness is subtle — mostly from the ice cream — which lets the freshness of the strawberries and cream shine through. If you prefer a little more sweetness, a few drops of stevia or your favourite keto syrup will balance it beautifully.

A dessert to assemble slowly and savour — each spoonful feels like early summer in a glass.

Fresh strawberries, silky yogurt, and a touch of cocoa — this quick keto parfait is cool, creamy, and beautifully simple to make.

Ingredients

  • 1 cup fresh strawberries, sliced or quartered
  • ½ cup double cream plain yogurt
  • 1–2 tbsp fresh cream
  • 2 small scoops keto vanilla ice cream
  • ¼ tsp vanilla essence
  • ½ tsp unsweetened cocoa powder, for sifting
  • a few fresh mint leaves

Instructions

  • Whisk the yogurt with the fresh cream in a small bowl until smooth and silky. Add the vanilla essence.
  • Layer sliced strawberries, a spoonful of the yogurt mixture, and a small scoop of ice cream in a glass or jar. After each yogurt layer, sift a little cocoa powder over the surface.
  • Repeat until the glass is full, finishing with strawberries on top.
  • Garnish with fresh mint.
  • Serve immediately, or chill for 5-10 minutes for a slightly firmer texture.
  • Notes

    To serve: This parfait is best served soon after assembling while the ice cream is still soft and the berries fresh. Clear glasses show off the layers beautifully — and that hint of cocoa creates a lovely contrast against the yogurt and fruit.

    Variations:

    • Use whipped cream instead of yogurt for a richer, dessert-style parfait.
    • Add a sprinkle of finely chopped nuts, toasted coconut, or dark chocolate curls for texture.
    • Swap some of the strawberries for raspberries or blackberries for a more tart profile.
    • I like to add some finely chopped mint leaves to every layer.

    Storage: Best enjoyed fresh, but you can prepare the yogurt mixture and sliced berries up to 4 hours ahead and assemble just before serving.
